A protein's amino acid composition and exposure of amino acid side chains influence its interaction with water. This kit demonstrates the important effects on proteins of physical parameters such as temperature, pH, salt concentration and dielectric constants, and illustrates how these effects are used for the isolation and purification of proteins

    3. Effects of acetone on solution of albumin and gelatin
